Obviously, Paul and Youth as The Fireman
and Paul as Percy "Thrills" Thrillington
and in multiple guises as The Plastic Macs ("Coming Up")
also: Wings as:
Suzie and the Red Stripes ("Seaside Woman")
The Country Hams ("Walking in the Park With Eloise")
Harrison, Dylan, Petty, Lynn, and Orbison as The Traveling Wilburys
The Beach Boys as Carl and the Passions
Frank Zappa and the Mothers of Invention as Ruben and the Jets
Eminem as Slim Shady
Garth Brooks as Chris Gaines
Steve Allen as Buck Hammer and Mary Anne Jackson

Not really a "famous" alter ego...
But during U2's Joshua Tree Tour their opening act cancelled for a few shows so they donned wigs and cowboy gear and went on stage as a country western band called The Dalton Brothers.
Peter Gabriel was very into "alter-egos" during his Genesis days but i don't know if he had a name for any of them.
