For me, the best backing vocals are the ones done by Paul and George to John's songs.

That became almost as a trademark to the Beatles's sound in the early albums.

The best one for me: You're Going To Lose That Girl

To list Paul's greatest backing vocals is an endless task. However I still get chills when I hear Paul's soaring harmonies on "Something", which is still one of the greatest Beatle songs ever. When Paul hits that high note...."I don't know, I-I-I-I don't know!!"......WOW!
