The new Elvis Costello/Allen Toussaint & Mark Knopfler/Emmylou Harris CDs has me thinking about other one-off duo albums.
Both of these are great, but some others I think are great include:
Eric Clapton/B.B. King - Riding With the King
Neil Young/Pearl Jam - Mirror Ball
Tony Bennett/k.d. Lang - What a Wonderful World
Van Morrison/Linda Gail Lewis - You Win Again
Linda Ronstadt/Emmylou Harris - Western Wall - The Tuscon Sessions
What are some of your favorites? And try to keep it to entire albums recorded by two artists that don't normally record together. (In other words no Simon & Garfunkel, etc.)

rollingstone mag online has a great flashback video of Bob Dylan/Van Morrison doing a small acoustic set on a hill top in Athens..just awesome,worth checking out
